A propos du site
A new blog, again? Yes. But a blog that aims to make you learn the basics of vegetable cooking, especially baking. Why? First of all, because becoming vegan is not easy: you have to change food culture, which requires a real effort, and we are quickly lost and alone for many months!
Then, because I am passionate about it: reclaiming pastry happens to me through understanding. So I booked some “theory” to explain you what I know and how I managed to do without eggs, milk and butter without giving up the “magic” properties of those!
So here you learn how to do basic, ie wholesale, foam, emulsion, paste … and I hope you will master those quickly with recipes I am proud to have developed, and to my knowledge, do not exist anywhere else! (O vanity ^^)
Judge for yourself, I suggest:
- my succulent “Chaville” floating island, a true foam that can be cooked in the microwave (hey! it took me months to achieve that!)
- exclusive, easy moss to any kitchen with ingredients everyday! (almost)
I may also add a few words about me: omnivore as everyone, vegetarian by necessity and vegan by passion, that’s the way! And like any journey, changing culture is a real mission, and like any priesthood, I make myself a duty to share my passion for pastry, which was well undermined by the removal of dairy products, butter and eggs … but. .. a passion that was reboosted by this major culinary challenge! You understand: I am an experimenter and have a small scientific training behind me witch says that yes, everything is possible and that no, the whole kitchen, even molecular, has not yet lived! Then delete the milk, butter and eggs, but never sacrifice the pleasure of sharing a meal, dessert, and vibrates our taste buds!
This site is a blog that is not expected to undergo rapid development, my ambition is primarily to provide the BASIS of all recipes to no longer use butter, milk, or eggs. I would love to talk with you, your alternatives, supplements experiments based on these new bases, and I will not hesitate to publish your great recipes, signed by you, of course!
I hope full attention from vegetarians and vegans, but also those who still forgot to buy eggs! (ok, it will also have to buy a plant or two for some fierce living little and lost places …)
